Chin-Chin Christmas Gin 2025 Edition

Last year our Christmas Gin really broke out across Australia in a way our limited editions hadn’t done before. It seemed our gin had become a staple of some family Christmases, while others were just discovering a new favourite. So this year, our journey to make Chin Chin Christmas Gin started much earlier — back in February. We’re always striving to make it better, and this year we wanted to age it a little.
This year marks the 5th edition of our Christmas Gin, and each version has taught us something new: a little more depth here, a softer touch there, a better balance of spice and fruit.
For the 2025 release, we started nine months early. Time was our secret ingredient. Letting the gin rest and age meant the flavours could deepen into something richer, more layered, more festive. But that choice came with challenges. The cranberries we used were slightly sour — lively but demanding. Too much cinnamon tipped the balance; too little let the tartness dominate. Vanilla became our quiet diplomat, smoothing the edges and drawing everything into harmony.
Getting to the final recipe wasn’t quick or easy. As a distillery, we went through more than 20 separate tastings. Small adjustments, heated debates, and plenty of second-guessing carried us from “almost right” to “this is it.” Along the way, the gin swung between too sharp and too soft, too sour and too flat. Slowly, the pieces found their place.
The result is our most considered Christmas Gin yet. Bright cranberry without sharpness. Cinnamon and spice that warm without overpowering. Vanilla that rounds it all out with a gentle, lingering sweetness. A gin made not for the noise of Christmas morning, but for the ease of Christmas afternoon — long lunches, late catch-ups, and quiet moments that stretch into the night.
Five editions in, this gin has become part of our own Christmas tradition. And we like to think it’s found a place in yours too.
